Chocolate Orange Muffins Recipe
Dry Ingredients:
2 cups of all purpose flour2 tsp. baking powder
1 tsp. salt
1-3 tbsp. orange rind
1 cup semi-sweet choco chips
Wet Ingredients:
1/3 cup oil
1 tbsp. vanilla
3/4 orange juice
1 cup sugar
1 egg
Procedure:
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the dry ingredients: flour, baking powder, salt, orange rind, and choco chips. Stir until well mixed.
- In a separate bowl, whisk together the wet ingredients: oil, vanilla, orange juice, sugar, and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Using an ice cream scoop or a spoon, fill each muffin cup about 2/3 full with batter.
- Bake the muffins for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
