Authentic Japanese Okonomiyaki Recipe


Ingredients:

Batter Mixture:
1 cup of all-purpose flour
1 tsp salt
1 tsp sugar
1 tsp baking powder + 1/4 cup milk
3/4 cup dashi (2 tsp. dashi powder. + 3/4 cup water)
4 large eggs
1/4 cup beni shoga
750 grams of chopped cabbage
1 carrots grated
8-12 shredded crabsticks


Takoyaki Sauce:
1/4 cup Worcestershire sauce
1/2 cup ketchup
1/2 cup oyster sauce

Garnish:
Takoyaki Sauce
Japanese Mayo
Aonori Powder
Bonito Flakes

Procedure for Batter:

1. Wash the vegetables. Cut the cabbage in half and remove the hard stalk. Cut the cabbage into small cubes.

2. Grate the carrots. Prepare the dashi by mixing dashi powder with water. Mix the milk and baking powder in a small bowl.

3. In a large bowl, add flour, salt, sugar, milk mixture, dashi, eggs, beni shoga, cabbage, carrots, and crabstick. Blend the mixture until thoroughly mixed.

4. In a non-stick pan, spray a generous amount of oil. Add around a cup of the complete mixture.

5. Fry until golden brown.Garnish with Takoyaki Sauce, Japanese Mayo, Aonori, and Bonito Flakes.

Procedure for Sauce:

  1. Mix Worcestershire sauce, ketchup, and oyster sauce together.
